No Chop Salmon Salad Recipe

I’m really trying to eat healthy lunches, I am THE WORST when it comes to feeding myself. So this week I’m going to try really hard to actually eat lunch that doesn’t consist of half bananas, bread crusts and arrowroot biscuits. Starting with this no chop salmon salad recipe.

No chop salad - Patchwork Cactus

I am really lazy with my food, like REALLY lazy. I make my kids all sorts of things from scratch, I even cut their cheese into star shapes, make jelly lollies and home make ice blocks. 

But when it comes to me? I usually eat the left over cheese that didn't make the cut. Literally. 

If there is any chance that I'm going to eat a salad it has to be SUPER easy to make and it also has to last for a good few days in the fridge.

So I have compiled a bunch of salad recipes that involve no chopping at all. Today I'm sharing my absolute fave! 

This one is;

Smoked Salmon
Boccachini
Baby Spinach leaves
Protein Mix (this one) 
Balsamic Vinegar 

It took two minutes, I didn't have to wash up a chopping board after and most importantly, I ATE SALAD FOR LUNCH!
