Breakfast stir-fry recipe

Who wants a breakfast stir-fry recipe?

I have been dabbling with a ketogenic diet lately. Yes, I’m aware that it doesn’t actually work for weight loss if you just dabble but I’m not interested in never having a glass of wine or avoiding bananas forever.

What I am interested in is dramatically cutting down on carbs so I can enjoy more of the good stuff, like cheese. In the past month, I have been going on and off, mainly because I was missing veggies and fruit (and wine) so I am making an effort to get more low-carb veggies in my belly. Enter zucchini. Where the hell have you been all my life?

This breakfast stir fry recipe is something I have been cooking daily. I usually have it for lunch though, breakfast is a coffee. I’m a lazy eater so I actually have the bacon chopped and precooked in the fridge, and the zucchini is also prechopped. You can obviously do it any way you want but this way I can throw all the ingredients in at the same time and it only takes about 5 minutes.

But, for the purpose of this breakfast stir-fry recipe, I’m going to pretend like I haven’t pre-cooked anything. You guys have probably only just googled “breakfast stir-fry recipe” and landed here so you don’t have a fridge full of prepped food and you probably don’t really need to know my life story either.

But just quickly, I’m not a nutritionist, I don’t know if this is technically ‘keto’ or if Keto is even good for you. I just know that there are very few carbs in this, quite a few fats and it tastes bloody good! 

So without further ado.

Breakfast Stir Fry Recipe

Ingredients

  • Half a cup of diced bacon 
  • 1 tsp crushed garlic 
  • Half a zucchini, sliced
  • 3 cherry tomatoes, sliced in half 
  • 1 egg
  • Half a small avocado
  • A crumble of goat's cheese
  1. In a nonstick pan, fry up the bacon, garlic, zucchini and tomatoes for about 4 minutes. 
  2. Switch off the heat, make a well and crack an egg into it. Put a lid on it and leave for about 2 mins. 
  3. Smash the avocado on the plate and pile everything on top and crumble some goats cheese over it all.
