Coconut Jelly Lollies – A Three Ingredient Recipe.

Did you know you could make lollies with just three ingredients? Coconut cream, jelly crystals and gelatine. For reals! Can you believe it?

Did you know you could make lollies? 

I knew you can make lollies, obviously, but I didn't know you could bang them together with just three ingredients and a microwave. No candy thermometer, no boiling hot lava, no stress.

So just to clear things up for those of you reading who aren't from Australia. I do not mean iced lollies and I don't mean lolly pops. I mean jellies, gummies or candy. Depending where in the world you reside. 

Anyway, I saw this recipe and thought, hey, that would work really well with coconut cream so these coconut jelly lollies were born. This was really just a trial; now I know how easy it it to make them I can experiment with some more grown-up taste combinations.

Ingredients

One packet of jelly crystals
Half a cup of coconut cream
Two Tablespoons of powdered gelatine 

Directions

Combine all ingredients in a bowl, give them a good stir then microwave it for a minute. Next just use a kitchen syringe (a medicine one works fine) to pop the mixture in moulds. Then just refrigerate them for about 15 minutes. Too easy. 

I got these moulds from Kmart. You can use ice cube trays also. Thanks so much to Oh So Busy Mum for the idea.
