Chocolate Rum Salami Recipe – Father’s Day Gift Idea

Yup you read the title right, Chocolate Rum Salami. Not actually at all salami but actually a great edible gift recipe for Father’s Day. No bake, rumtastic, chocolate loveliness BAM! Best Father’s Day present ever. Ok, maybe not the best but it’s not bad right? If you’re feeling fancy you can call it Salame di Cioccolato.

Yup you read the title right, chocolate rum salami. Not actually at all salami, but it is a bit creepy how much it looks like it right? If I had to describe the taste it's a bit like a no bake biscuit, a bit like a rum ball a lot awesome. This recipe is adapted from an original Italian Desert called Salame di Cioccolato and it's a total keeper. What better time to share it then Father's Day, it makes the perfect edible gift and I think we can all agree that edible gifts are pretty fab.

Ingredients

One block (220g) of dark chocolate, I used Old Gold
20g of cocoa
120g butter
150gs caster sugar
3 eggs roughly beaten
60mls of spiced rum
A few shakes of good quality vanilla extract
Half a cup of salted macadamias
Half a cup of almonds
250g or one packet of arrowroot biscuits
1tbsp of icing sugar

Directions

Pop the chocolate on a double boiler to melt and roughly chop up the nuts. In a saucepan on high heat roast the nuts, shaking the pan occasionally until they start to smell awesome. The more cooked the better, I burnt mine a tiny bit and they tasted all smoked up, so good. 

Take the now melted chocolate off the heat to cool and mix in the cocoa. In an electric mixer with a paddle attachment, beat the sugar and butter until creamy. Swap to a whisk attachment and mix in the eggs until beaten, then the rum and vanilla extract, beat it until it's fluffy and forms stiffish peaks. 

Add the chocolate to the mix, beat again for a few minutes then stir in the nuts and chopped biscuits. Did I mention you need to chop the biscuits up? Next, cling wrap the bowl and pop it in the fridge for an hour or so. 

When it has hardened, lay some cling wrap down and spoon some of the mixture onto it. Wrap and roll until it looks like a salami, twisting the edges to keep it nice and firm. Then chuck it back in the fridge for a few hours until it's cold. When it's fully set you can unwrap it and roll it in some icing sugar, then lick the beater. The most important step – give it to a dad and say thanks for being awesome!
